I experiment with different grind sizes. How does the Toddy perform with coarse versus fine coffee grounds?

Coarse ground coffee is the better recommendation for making cold brew coffee. For fine grounds, the felt filter of the Toddy does not work so well. In this case, it's best to brew the coffee in a bag, and there should be three bags provided with a new product purchase, or you can buy them separately.
