Overall Verdict
The SunrisePro wouldn’t be our first choice for a manual sharpener, but when you want sharpness and fast, you can count on it to get the job done. Unfortunately, we can’t say the same about the Chef’sChoice 4643.
The SunrisePro is a compact device with a suction cup for a base, which only works on certain surfaces. It sharpens faster than most despite (or because of?) having only one slot. The maximum sharpness level it can bring your knife to is also on par with multi-stage devices. It does, however, shave off a lot of steel from the knife’s edge, which some may find a deal-breaker.
The Chef’sChoice 4643 sports a much more substantial size and great design. It’s much safer and easier to use than the SunrisePro. The stability it offers remains unmatched by any other pull-through sharpener. Unfortunately, its sharpening discs are a failure: They create a rough edge that simply doesn’t cut it.
So as much as we love the Chef’sChoice’s robust build and design, when there’s a knife to sharpen, we’d rather go with the SunrisePro.
